- 2 cups of wheat flour

- 3 egg whites
- 1 whole egg
- 3 cups of grated carrot

- 200 gr of pineapple in syrup, drained (the approximate equivalent of a can)
- 1/2 cup raisins
- 1 glass of rum
For the glaze:
- 180 gr of cream cheese
- 3/4 cup of icing sugar
- 1 tablespoon cornstarch
- 1 or 1/2 teaspoons liquid vanilla
Step by step preparation:
- Combine the dry ingredients in a bowl: flour, baking powder, and cinnamon.
- In another larger bowl, beat the sugar, oil, honey, whole egg and a glass of rum. Add the flour mixture a little at a time until well integrated with a spatula.
- Add the egg whites until stiff and mix carefully so as not to remove the air.
- Flour the raisins.
- Now add the grated carrot, walnuts, raisins and pineapple previously mashed with a fork to the mixture. Mix carefully.
- Heat the oven to 180ºC.
