Marzipans are one of the most sugary Christmas sweets. They are very typical of these holidays and bring that special sweetness to dinners and family gatherings. However, what to do when we have a diabetic person nearby who must control their sugar levels from him?
If you are good at cooking and want to try it, you can make the recipe yourself! You should only replace the sugar with other ingredients that diabetics can take. If you dare, we leave you below two very typical recipes: the one with marzipan and the one with panellets. Check out!
Sugar-free marzipan recipe (suitable for diabetics)
What ingredients will you need?
- 100 grams of ground
- Maple syrup (optional)almond
- Half a teaspoon of Stevia
- 30 milliliters of water
- Vanilla essence (optional)
How to make this recipe?
- To start, mix the ground almonds with the stevia in a bowl and then gradually add the water while continuing to mix, until you have a compact dough.
- Continue adding the vanilla (you can also add lemon juice or cinnamon for more flavor) and if you think it’s getting too thick, add more water.
- Cover the bowl with a kitchen towel and let the dough rest for an hour. Subsequently, divide the dough into individual units and give them the shape you want (you already know that marzipan often comes in funny shapes).
- Preheat the oven to 180ºC and place your pieces on a baking tray. Brush with a little maple syrup and bake on top until golden brown.
- When they are ready, all you have to do is take them out of the oven, let them cool and place them on a nice tray. Ready!
Panellets with pine nuts recipe for diabetics
Ingredients you need:
- a medium potato
- 250 grams of ground almonds
- 3 tablespoons of Stevia
- an egg
- 100 grams of pine nuts and/or chopped almonds
How to do it step by step?
- We put a pot of water to boil to cook our potato. When we have it ready, let it cool and remove the skin. Then, with the help of a fork, mash the potato well until it is a puree and reserve.
- Meanwhile, we put the ground almonds and the tablespoons of stevia in a bowl. Add the mashed potato that we have made in the previous step and mix well. The idea is that there is a compact mass but without going too far. Therefore, if you see that it has become too thick, you can add a few drops of water to lighten it a bit.
- After this step, we cover with a kitchen towel and let it rest for about an hour. Then it will be time to separate the units and make small balls with them.
- When we have the balls, we separate the white from the yolk in a separate bowl (reserve the yolk) and beat the white a little to pass our balls through it, one by one. Then we coat them in another dish with pine nuts (you can use almond pieces if you want or make them assorted) and apply some pressure so that they stick well to our balls.
- We preheat the oven to 180ºC and, while it is ready, we paint our panellets with the egg yolk that we have separated before. This way we will get them to brown and be delicious. We prepare the tray with oven paper and inside! We will have them for around 9 minutes, although it is better that, after minute 7, you be attentive. When you see them golden turn off the oven, take them out and let them cool.
