Homemade marzipan recipe for celiacs: Bye, bye gluten!

If we think of traditional Christmas desserts alongside them, nougats and marzipan cannot be missing. It is totally impossible to imagine a Christmas without these delicious delicacies on the table!

Surely many of your memories are linked to those moments at Christmas surrounded by your family laughing, singing Christmas carols and eating sweets, but what if we have a celiac friend or family member? What do we put, in that case, on the table? What menu can we prepare?

Luckily, we have a simple solution for you in the form of a recipe. We are going to teach you how to make a marzipan for celiacs step by step, gluten free! With them you will win in two steps: you will have elaborations made by yourself (that always triumphs at a dinner) and, on the other, all the guests will be able to eat them! Including celiacs and gluten intolerant. Perfect! Do you dare to do them?

What ingredients do you need to make marzipan for celiacs?

  • 300 g ground almonds
  • A third of a glass of water
  • 300g of sugar
  • Half a teaspoon of cinnamon
  • Zest of half a lemon
  • 1 egg

How is it made step by step?

  • In this first step, we will put the 300 grams of sugar and water in a saucepan. We will heat over medium heat without stopping stirring until we see that it begins to take on a color and syrupy texture. Next, we will add the cinnamon (and a pinch of lemon zest).
  • When we see that the syrup is made, we will then add the ground almonds (which we have previously been able to grind ourselves. We just have to toast the almonds and grind them well) and stir the mixture until everything is well integrated. Afterwards, we will let it rest until it cools down.
  • In this step it is very important that the mixture is very cold. We will knead the mixture with our hands and we will let the almonds expel the oil until the dough is very compact. Careful! If we do not carry out this step well, it is possible that in the subsequent ones the dough will spread and the result will not be as expected, so take the time to knead well and expel all the oil.
  • When it’s done, give them the shape you like best. Although the easiest thing is to make small balls, squares or put them in a silicone mold, the fun thing will be to give them a free shape so that each one is different. (You already know that marzipans are characterized by funny shapes, so let your imagination run wild!). When you have the figures ready, cover them with kitchen film and put them in the fridge for a day.
  • The next day, we will have to preheat the oven to 180ºC, take the marzipan out of the fridge, remove the plastic wrap and place it on a baking tray with paper (so they don’t stick). We will paint the upper part with the beaten egg yolk and put in the oven for a few minutes (approximately 10 minutes, although it is better that you pay attention after 6 minutes to remove them at the point that you like the most). They are ready when they have a thin, shiny, golden layer on top.
  • When you see that they are toasted, take them out and let them cool. Then all you have to do is enjoy this very Christmassy dessert with celiacs and gluten intolerant people without worries. You are going to suck your fingers and you will want to repeat!
