Gingerbread Christmas Cookies Recipe
Ingredients
- 20 grams of whole wheat or oat flour
- 150 grams of margarine
- Two eggs
- Half a tablespoon of ginger powder
- A large spoonful of Stevia
How to do them step by step?
- First, we beat the eggs together with the margarine and stevia. It will be easier for us to work the margarine if we have left it at room temperature, although it does not usually cause a major problem.
- When we have it ready, we carefully add the flour and the tablespoon of ginger until we obtain a very homogeneous dough that allows us to knead it. Once ready, we stretch it with the help of a roller until we have a more or less thin layer. Next, we make the shape of the cookies that we like the most (help yourself with a cookie cutter) and place them on a baking paper, to bake for a quarter of an hour at 180º. Finally, let cool for about 20 minutes.
Vegan Christmas Cookies Recipe
Ingredients
- 160 grams of raw almonds
- 170 grams of wheat flour
- 130 grams of coconut sugar
- 55 cup extra virgin olive oil
- 60 grams of almond milk
- 80 grams of maple syrup
- A tablespoon of ginger powder
- A tablespoon of ground cinnamon
How to do them step by step?
- Let’s see the step by step of this very Christmas vegan recipe. While the oven is preheating to 180ºC, we put the almonds in a blender glass and beat them until we get a powder, then add the wheat flour, sugar, oil, almond milk and syrup and beat again until we get a dough homogeneous and compact. Finally add the ginger and cinnamon.
- When we have everything we must spread the dough on a smooth surface and knead it with a rolling pin to work it well. The idea is to get a more or less thin layer, about half a centimeter high, approximately.
- Once ready and with the help of a Christmas shaped cookie cutter, we cut one by one and place them on the baking tray. (Place silver or baking paper so they don’t stick to the tray). - 80 grams of olive oil
- 90 grams of brown sugar
- 25 grams of cornstarch
- 95ml almond milk
- 200 grams of whole meal flour
- A teaspoon of vanilla extract
- 4 grams of pastry yeast
- 150 grams of dark chocolate
- 100 grams of chopped walnuts
- 15 of pure cocoa powder
How to do them step by step?
- First we put the brown sugar and olive oil in a bowl. We beat with the help of some rods. We will be incorporating the ingredients little by little without stopping mixing. Add the vanilla extract and cornstarch while continuing to mix. Later we are incorporating the pure cocoa and half of the almond milk.
- Once we have a more or less homogeneous mass, we add half of the whole wheat flour and while we do so, we melt the dark chocolate in a water bath. We add it when it is ready and finally, we finish adding the rest of the milk and the flour that we needed to add. Finally, we mix the yeast and nuts.
- Once our dough is ready, we make small balls on the baking tray (it is recommended that you put a baking paper so that they do not stick). Leave some space between the balls and ball because with the help of a spatula, we will crush them before putting them in the oven, to give them the shape of a cookie.
- Preheat the oven to 180ºC and bake them, with the up and down function, for a quarter of an hour. Finally, we let cool.
No-bake Christmas cookie recipe
Ingredients

- Condensed milk
- Vanilla
How to do them step by step?
- First of all we crush the cookies very well. For this we can use a mixer or we can put the cookies in a bag and crush them with the help of a mallet or a spoon. The goal is to get much chopped cookie dust.
- Later, we add the condensed milk. It is better to add little by little so that we do not go too far. The idea is that it is enough to create a paste, not that the mixture is too liquid. The result should be a compact dough, which allows us to move it without a problem without many pieces of biscuit coming off. To this mixture we must also add the essence of vanilla (one tablespoon).
- Once ready, we spread the dough between two baking papers so that it is easier for us to manipulate it. Knead with the help of a rolling pin until there is a fine dough, as thick as we want the cookies. Then, we make the shapes with the help of a cookie cutter and let them rest at room temperature for 2 hours.
Finally, we can decorate with chocolate noodles, coconut or whatever you can think of!

Ingredients
- 100 grams of gluten-free flour (special for pastries)
- 80 grams of almond flour
- 25 grams of cornstarch
- 100 grams of icing sugar
